Cake Batter Fudge


To kick off the end of the year with our last blast of energy…the perfect ingredient is SUGAR!  I’ve wanted to try this recipe because it sounds delicious!  If you are in the mood to curve your sweet tooth, then this recipe will hit the spot.  NOTICE: this recipe is not super healthy
…so beware! J

This cake batter fudge is not made like traditional fudges.  It’s easy and microwaveable.  Most fudge recipes are very temperamental depending on the weather.  Is it humid? Is it hot? Cold? Rainy?  This recipe kind of excludes those elements.  It also keeps the mess to a minimum!

Here are some tips to keep in mind for this recipe:
1.     I don’t think the icing is necessary because the dessert is already 
      sweet enough.
2.     The simplicity makes it doable for any occasion and even last 
      minute makes.
3.     Add the chocolate chips slowly so that they all melt without clumping.
4.     It is important to keep stirring after microwaving the ingredients.
5.     I didn’t have foil, so I used cling wrap and it came out easily.
6.     I suggest leaving the fudge in the fridge for the full 60 minutes or even a little longer so that it is firm enough to cut through without melting.
7.     It lasts longer kept in the fridge, but you can eat it within a couple of days if you leave it out.  Notice that if you leave it out it will become softer again.
8.     Another way to mix it up, try using dark chocolate with a devils food cake mix or milk chocolate with a chocolate cake mix.  Mix and match to fit your taste buds.
9.     I think to lessen the sweetness you could try yogurt chips (either store bought or homemade).

This recipe works well for a birthday cake exchange.  I like the original blog’s idea of bringing it to a picnic or gathering for something different and delicious.  I’m sure the sweetness factor would win over any kid friendly activity.
